I'm just trying to level everything up as much as I can to finish off the remaining feats. Voracity gain 20 more energy when eating. I'm just entering the late game myself, and I'm visiting the void, making nuclear structures, and farming skeletons for massive amounts of money. There are a few skills that you can unlock to help keep your hunger up, all of which are under the forager section. The fight itself isn't difficult, but you'll want a structure for cover - I suggest using a temple or other structure that already exists on the map and cannot be destroyed.
It ended up destroying several of my lighthouses and other structures as well. I'm sure higher level walls will be able to contain its projectiles, but my brick arena was completely destroyed before I was even halfway through the fight. If you're going to spawn the Dark Beet, do it well away from any structures you might have. My fight now usually takes about a minute, maybe 90 seconds. I tend to just stick as close to the boss as possible and attack with a sword, healing when I need to. The arena was mostly to control the additional skeletons, as they won't attack you and tend to wander off elsewhere. The arena is made of brick walls and covers almost two map squares, but you probably don't need that much space. I did build an arena for the Skeleton King, and placed some Ballistas in the corners. Granted, this is probably when I was a bit under level to deal with them. In my experience, the Toxic Guardian is probably the easiest, followed by the Slime King, the Skeleton King, then the Dark Beet.
